Shell Egg Grades

USDA shell egg grading is a voluntary service paid for by shell egg producers. As an independent third party, USDA is recognized for assuring that eggs meet the U.S. grade standards for quality and sanitary processing. Eggs are categorized into one of three consumer grades:

  • USDA Grade AA – The freshest and highest quality eggs will receive a Grade AA.
  • USDA Grade A – Very high quality eggs will receive a Grade A.
  • USDA Grade B – Grade B eggs are usually used for breaking stock (liquid eggs) and baking, dependingon the number of defects.

Only shell eggs officially graded by USDA are eligible to bear the USDA grademark/shield. All egg labels bearing the USDA shield require pre-approval by AMS to ensure truth in labeling prior to their use. Only product that is both officially graded and certified by USDA as sourced from cage-free flocks are eligible to use the “Certified Cage Free” design.
